Today I discovered you can still make a reasonable rice pudding if the only short-grain rice you have is Arborio risotto rice. It takes ages to cook, requires an implausible amount of milk (somewhat over a pint for one generous serving), doesn't to my taste require sweetening, but is improved by a bit of nutmeg grated into it.
